What is Rambam BreadTM?
The Rambam (Maimonides), famed scholar, philosopher and physician, is the inspiration for our flagship bread line.
The Rambam served as court physician to Saladin and his treatises on medicine and healthy living predate his era by many centuries and are used even today in the study of modern medicine.
In his treatise "On the causes of symptoms", the Rambam details the method to bake healthy bread: "It should not be made white ... and it should not be sifted thoroughly until none of the bran remains in it. It should be kneaded exceedingly well and it should be noticeably salty and well raised. The loaves should be baked in an earthen oven."
Rambam BreadTM, an exclusive bread of the Saidel Jewish Baking Center and invented by Les Saidel, precisely follows this guideline. We stone grind organic whole spelt flour ourselves and include all parts of the spelt kernel, the germ and the bran in the flour. Our dough is fully hydrated using a medieval French technique, well mixed and is sufficiently salted. Finally all our baking is done in our unique brick (earthenware) oven.
In addition to the accurate, authentic preparation and baking methods, our Rambam BreadTM also includes a natural blend of medicinal herbs prescribed by the Rambam for its health giving qualities.
Rambam BreadTM also contains a plethora of health giving ingredients recommended by modern science, Omega-3, Lecithin, Calcium, Iron, Vitamins A, B Complex and E.
It is rich in fibre (bran), lower in gluten than regular wheat bread (due to the spelt and special mixing technique) and has a low glycemic index, which makes it ideal for those who suffer from diabetes.
Rambam bread is also symbolically shaped. The loaf is scored down the center to symbolize the middle path in life, a cornerstone of the Rambam's philosophy.
